Living simply

As promised (awhile ago)I thought I would share about the simple living class that Bill and I had this semester. Going into it the only thing I really knew (I thought...I didn't know for sure) was that we were going to have to go without electricity, Internet, and make ALL foods from scratch for two weeks.  Well, that wasn't entirely true it was pretty close.  The rules were, for the duration of the class (2 weeks)
~we were not allowed to use any electric appliance
~we could still use the washer and dryer (because there is only so much you can do to simulate what life will be like overseas)
~lights had to be out by 10pm
~No surfing the web but we were allowed an hour a WEEK to check and respond to emails only.
~Had to make all meals from scratch...meaning no boxed foods (didn't mind that). We could use canned fruits and vegetables but nothing else that was in a can. For example if you wanted spaghetti sauce you had to make it yourself.  For that matter if you wanted to have spaghetti you had to make the noodles from scratch.
~We were supposed to try at least two new things that we had never made before. I made spaghetti sauce. However I did NOT want to bother to make my own noodles so James was the only one to eat the sauce until class was over (he eats sauce on his rice almost every day).
~No leaving campus except for Dr. appointments and Church. That meant no running to the grocery store.

Following these rules meant that I didn't get do blow dry or flat iron my hair for 2 weeks. We went to bed earlier every night because with the lights out and no Internet what is there to do? (Ha ha!) Meals took so much longer to make.  You have to have a plan.  You can't just go on a whim. I planned out my meals for the two weeks and bought most of what we needed ahead of time.  The day before our scratch cooking began they broke us up into groups. There were about ten people in each group. Each group was pared with another group of ten people.  One group took a walkie talkie radio and went in the downstairs part of the building and the other had their walkie talkie upstairs.  We had to take turns giving orders over the radio. There were two "supply buyers" from each group. Bill offered to be one of them for our group.  The purpose of the exercise was to give you a small taste of what ordering over the radio might feel like (this is the reason I didn't buy everything I needed ahead of time because I needed to have some things bought from the store for me.). This exercise also taught me something about Bill and shopping.  He does such an amazing jog getting the RIGHT products. I was surprised at how well he did (sorry honey) because every time I send him to the store he comes back with something different then what I asked for.  I learned that the key for getting him to buy the right ting is....drum roll...be specific.  It sounds so silly but it totally works.  If I give him all the exact details he needs he will get the right thing %100 of the time. Very helpful thing to have learned.  I digress...

During the two weeks the only homework we had was our scratch cooking.  I absolutely LOVED that! I really enjoyed being in the kitchen all the time.  I enjoyed making bread by hand. I had forgotten how fun that was since I always use my bread maker.  I found a recipe that our family loves and it is pretty easy (I will post soon).  It is a cool rise recipe. It doesn't take as long as other recipes I have used.  I also loved the fact that Bill was required to make four of our meals and had to bake a loaf of bread.  I have to say his bread (and this was his first time) turned out better then mine.  We may have discovered a hidden talent of his...I'm sure he wishes that to be undiscovered {grin}. One thing I realized during this time was just how MUCH I depend on appliances. Heating up leftovers takes so much more time when you can't use a microwave.

One of the course requirements was a weekend camping trip. It was optional for mother's and children.  I opted not to go. It was at the end of October and it was going to be really cold that weekend.  I was concerned about how we would keep Katy warm. Also Anna was having breathing issues, so we decided that I would stay home. Bill asked Ryan if he wanted to join him. Ryan was more then excited to go. There were no tents allowed on this trip.  You had to make your own shelter using tarps. (this is the new version of the six week jungle camp that they used to do...so glad we didn't go through training then. ha ha!) Although they didn't get much sleep they managed to stay warm.  They spent the weekend with the other students hiking (learning to use a compass) and learning how to butcher a live chicken (and eat it)! Meanwhile back on the home front while those two were off having adventures, I was home alone with four kids.  I was a little nervous about being a single parent for the weekend but it went really well. I took the kids to a harvest festival. We played games went on a hay ride and ate food.  Then at the end of the night we went to a  blue grass concert. We had a blast. I spent the weekend hanging out with the kiddos and having fun! Although we were really glad to have Bill and Ryan home again on Sunday.
This is the shelter that Bill built for them.

Bill and I decided that we were not meant to live a simple life. {grin!} I'm joking...sort of. :)  I didn't like being without internet.  However, I am sure we will be faced with it and we will get used to it.  It made me feel so out of the loop on what was going on back home with friends and family.  I know it sounds crazy because it was only two weeks, but in today's world a lot happens on the net in that amount of time. You can quickly get behind. I know I will get used to it, but it it made me think about how much I will miss that daily "knowing" and being in contact with loved ones.

All in all it was a good experience and we actually had fun along the way. I'm sure it was only a tiny glimpse of what life will be like for us in the future! :)

Back to the land of technology and electricity

It's been a long two weeks but we made it. We survived our simple living class...where we had to go without any electrical appliances and make every food item from scratch.  I can't wait to write more about it but for now just wanted to let you all know that we are back online. I will be back soon to tell you all about it.

Until later...

Where did summer go?

and all my time? The summer has just flown by for us. I thought for sure I would have more time to get on here then I have. I did have some spare time but I just chose to use it for other things. Documenting our summer just wasn't high up on the list. I mostly just wanted to chill with friends and family and snuggle my newborn. I have been busy and content with those things. Sometimes it's just better to live life then to write it all down. (gasp! can you believe I just said that?)

While the temperature says it is still summer the date would indicate that our summer {break} is just about over. After being gone all summer back home in WI we arrived at our temporary home (until December) early Monday morning. We had a wonderful summer being back in our home church visiting with everyone. Now it's back to the grind. We start school this coming Monday...ready or not! :) No, we really are looking forward to getting back into a routine and seeing what is in store for our family this semester.

Since I don't have time to give every detail of our summer I think I will briefly (and maybe randomly) summarize some thoughts and events:

~We spent a week visiting my family out east. What a blessing to be with my brother and sister and their families. The last time we saw each other was when my mom passed away, so it was so nice just to visit for fun.

~Traveling with a newborn is much harder then I thought. It took us 3 hours longer then it should have when we drove out east. And it was WICKED hot! And we don't have air conditioning. So, 11 hours in a car with no air AND a newborn...yeah! But it was totally worth it to see my family.

~We got stuck in Chicago (on out way back from PA) for 2 hours when we had been traveling all night. There was flooding in the city and they had shut down a main road. We had been planning to stop as soon as we got through the city so I could nurse Kaitlyn. We tried going through side streets (thankful for a GPS....although it doesn't warn you when going through bad parts...yikes!) and everything was backed up. I have never been more thankful for a breast pump. :) I ended up having to pump and give her a bottle because we couldn't stop. Thankfully she took the bottle because it was the first time.
̰
~We put over 3,000 miles on our van this summer! :)

~I didn't get as many books read this summer as I wanted.

~I got hooked on a few (dumb) T.V. shows during some of my late night feedings with Kaitlyn. I probably should have been reading instead.

~I got my hair cut...really short...after having a big argument (total misunderstanding between us, which was resolved quickly) with my husband. I regretted cutting it. I think the moral of the story for me was, never get your hair cut after an argument with your hubby. :) I am starting to like my hair now but it has taken me a few weeks. Maybe when/if I feel brave I will post a picture.

~We stayed in 3 different homes with 3 different families this summer which was a blessing, but at the same time was also stressful. I am so thankful for how God provided for us. I am also thankful to be back in our own space now. It was hard for me not to really have any alone/private time with my husband this summer...especially after having a baby.

~We saw God provide in amazing ways this summer! One way, (which may sound silly) was the amount of strawberries we had. Our kids LOVE strawberries. Well, for a few weeks there we had person after person bring strawberries to us. I just had to laugh and thank God for how He cares about even the little details. We had a feast of strawberries every day. We got to share with our kids how God cares about even little things, and how He delights in the details. What a good God we have because He certainly didn't have to do that for us and yet He did. :)

~We had to have our car fixed 2 times while back in WI. God provided every penny (like over $600) we needed through other people. The cool thing is, He provided it right before the car broke down. So we knew exactly what the money was supposed to be used for. :)

~I feel so blessed by our home church. Bill and I left there every Sunday just in awe at how good God is. When you can walk away every Sunday feeling encouraged in the Word and by other believers now that is a good thing!

~My friends threw me a beautiful baby shower after Kaitlyn's birth. I have so many diapers for her I won't need to buy any for a long time. :)

~The boys participated in t-ball this summer for the first time and LOVED it. Oh and Bill was the head coach of their team. Hee hee. I never thought he would do something like that, but he did a good job.

~Anna, Ryan, and James took swim lessons.

~I got to do a few photo sessions for friends this summer (but not as many as I had planned to or wanted to...there just wasn't time). I get nervous every time I take pictures for someone, so I spend time in prayer before each session. I want to be a blessing to others and I can't do that on my own. I LOVE taking pictures for other people, it gives me great joy.

~I am praying about taking that love of photographing others and turning it into something more. I have spent the last year and a half getting experience. I am scared and excited but mostly scared. I don't know if I am good enough to jump in and start a small (very very small on the side) business. I am seeking wisdom from the Lord before I make any final decisions.

~We started potty training Claire. It is going better then I thought. We are on day 4 now and she hasn't had any accidents in the last 2 days. She seems to have "got" it. She tells us when she needs to go. I am amazed. It would be so wonderful to only have 1 in diapers.

I am sure there are more things that I could include but I am going to wrap this up. Pictures from the summer coming soon.

Until later!

Nesting?

I have been in a total nesting craze lately, I think. Oddly enough our house is such a mess right now with all the projects I have going on. But it is on it's way to being clean. I have become obsessed with cleaning. I think I have this fear that the baby is going to come and my house will be messy, and I will have to come home to a messed up house, and that just doesn't appeal to me right now. I cleaned out the basement and got rid of tons of stuff that we are no longer using. Yesterday I pulled the refrigerator out and cleaned out behind it. I decided over the weekend to paint the Nursery (formally known as the office) a light green color. I was hoping to be done already, but I have only had about an hour a day to work on it. This weekend it will be done!! :) I want to get the crib set up and the new bedding on. I bought letters for the baby's name (Yes we finally picked a name...and yes it's a secret!) to paint and hang on the wall. I feel good. Things are starting to come together. I washed all the tiny clothes for our sweet girl. Painting and decorating her room has been so fun and really relaxing. We are starting to get excited around here for baby girl's arrival....only 35 days to go...or less!

This is close to the color of the wall. The new bedding set for the crib.Me painting! My sweet hubby took these pictures. Notice he had to zoom in on my exposed belly! :) I think it's about time to have the baby...clothes are getting too small! :)

My messy kitchen

During or after every meal this is what happens. I have to clean up the huge mess James makes. Problem is it's not just normal mess that kids make...if I turn my back for a second the whole plate is on the floor. Is it just my baby or do other moms have this problem? It is very frustrating, and a habit I want broken soon!! This is something we are working on! :)

My random busy days

I am tired tonight. I have been trying to get our family back to a more normal routine before school starts next week. Bill started his new job this week (Yea, praise God). It is going good so far. The dive isn't as bad as we had originally thought. He does have to leave the house a little before 7 a.m. though. So, I have been getting up early. I help get him ready and make his lunch. Then I make myself a cup of coffee and have my quiet time. I just love the early morning when everyone is still asleep. I am not a morning person by nature, but now that I am starting back on a routine I really enjoy it. I really need that fresh start to my day. Time to be with my Savior, and the oppertunity to cover my family in prayer as the day is just beginning.

I am trying very hard these days to keep on top of the housework. I want Bill to come home after a long day at work to a peaceful clean home. I know that won't always be possible, but I pray for the strength and energy to attempt it.

James keeps me pretty busy. Today he decided he wanted to "help" me with the laundry. He at least had fun taking the clothes in and out of the basket. (BTW, the garbage bag behind James is full of my clothes that no longer fit because baby #4 is starting to grow more.)

He also decided to crush these boxes for me before they went into the trash. He has seen us doing this, so I guess he thought it would be fun.My days have been so full of cleaning, preparing lessons for Anna and Ryan, chasing after a busy little man, reading stories, playing games, making meals, etc... I wouldn't trade it. My job is 24/7 and exhausting but I am so thankful for the opportunity I have to do all this.

Thank you God for everything you have blessed us with; for our 3 precious little ones. Help me to be the mom you want me to be, and to rely on You and not myself. Please give me the strength to greet tomorrow. Thank you that Your mercies are new every morning! Amen.

And now I am off to bed. Tomorrow is another busy day.
